L’Enclume, the two Michelin-starred restaurant from Chef Simon Rogan in the quaint Lake District village of Cartmel is now widely regarded as one of the UK’s leading dining destinations.
Located in a former 13th century blacksmith’s workshop, the name L’Enclume, which means anvil in French, pays homage to the iron metal-working tool discovered in the barn pre- renovation. Today, it remains pride of place in the 48-cover restaurant and as L’Enclume’s internationally recognised motif
It is here where Simon and his team work passionately throughout the year to grow organic vegetables, herbs, fruits and flowers; whilst closely studying the seasons, soil and sunlight to ensure their growing methods are never standing still. Cows, chickens and pigs are also reared at the farm, whilst other ingredients are sourced, wherever possible, from the surrounding Cumbrian countryside.
With an ever-evolving and hyper-seasonal menu, which changes almost daily according to the produce flourishing in the valley, the dishes at L’Enclume give prominence to the concept of the ‘perfect ingredient’ – a philosophy at the centre of everything Simon Rogan strives to achieve. In short, this encompasses the notion that it is only through growing the perfect vegetable, herb or fruit for example, that one can create the perfect dish.
